There are times when nothing turns out quite right—the cookies burn—the soufflé flops—the soup has no taste—the bread doesn’t raise. The pantry is stocked and you still don’t have the spice or herb ingredient the recipe calls for. But still—I love to be in the kitchen more than any other room in the house. When I say this to people they typically say one of two things—Either they get a look of distain or a puzzled look—as though to say—“you’re crazy” and then proceed to change the subject quickly. Or they say something wistful like “I wish I could cook but I’m not good at it.” This response makes me feel perplexed. I used to think everyone liked to cook. And I believe that if someone really wants to get good at it-- they can. My mother always said, “If you can read, you can cook.” Growing up, I remember watching her joyfully preparing foods in the kitchen. I even remember her making homemade potato chips. You would think that having me in toe after raising eleven other children she may have given up or ran out of patience but that was not the case. I remember being allowed to help—it was a messy thing. Mixing-chopping-kneading-peeling-stirring-spreading and pouring. Even when it did not turn out quite right she would praise my efforts. The kitchen is a great place for children to develop life skills; shopping–cooking-cleaning up, all sorely needed for becoming self-sufficient. This is the reason on this website you will see children participating in preparations on some of the tutorials. My mother also enjoyed sewing. If she wasn’t in the kitchen, she was most likely at her sewing machine. She made all of our clothing in addition to making all of our food from scratch. As a young person, it seemed as though she thought it “ungodly” to buy prepared foods or store bought clothes. Maybe that is one of the reasons I seem to feel a tinge of guilt if I buy prepared foods. One of the desires of my heart in preparing foods was to come up with a recipe that would make food prep easy, healthy and also taste good. It began in 2010 making a frozen meat free hamburger. It became a challenge to market a frozen food product so I decided to create a product that was dry packaged. That is how Patty Up™ came to be. That is how it evolved. I wanted to manufacture a product that was first of all safe—free of chemicals, pesticides, low sodium, and gluten free, a Non-GMO and free of food additives. Today it seems that food is not really food, but rather cheaply manufactured food-like products with salt and chemicals to please primarily the taste buds and can make a person un-healthy and sometimes even sick. Real food tastes good all by itself. And the quest for “clean food” is certainly not unique to us. Today’s consumers seek more specific information on foods they buy. Americans are looking for more healthful options at restaurants and other foodservice places. People are beginning to define healthy eating based on quality features rather than fewer calories—according to a health report by consulting firm The NPD Group 2013. “The feature most important to consumers seeking healthy menu options is quality, such as fresh, natural, and nutritious ingredients. Fewer calories were among the least important features”. The fastest growing importance is for Non-GMO Verified choices in foods. It is estimated that 90%of all soy, sugar beet and canola is now grown using GM seeds and it is estimated that GMOs are present in over 75% of processed foods in the United States. The ingredients in our products are from the very best quality possible to buy. They come to us fresh and are manufactured by us so they are not only safe but have a longer shelf life. Mushrooms and nuts have naturally good flavors.
